As the name suggests, lemons were traditionally salted and packed into jars to preserve them, with the added benefit that the maturing process softened their rinds and mellowed their sourness creating a wonderful depth of flavour. The Eastern Mediterranean recipe for preserving lemons is a thousand years old and hasn’t changed a bit – quarter them, salt them and pack them in a jar with some juice – simple.
Lemon and chocolate is already a winning combination but the salty tang of preserved lemons is unbeatable. We’re quite proud of this one.
